The art of Tonkotsu begins before dawn, when our chefs fire up the massive stockpots. Pork bones, carefully selected and cleaned, bubble and reduce over low heat throughout the day and night. This patient process breaks down collagen into gelatin, creating the signature creamy texture that Tonkotsu lovers crave.
Our recipe pays homage to the original Fukuoka-style ramen, where this dish was perfected in the bustling yatai (food stalls) of southern Japan. We've added our own Yume touch: a secret blend of aromatics and a finishing drizzle of garlic-infused oil that brings depth without overpowering the delicate pork essence.
Every bowl is crafted to order with our hand-pulled noodles, cooked to your preferred firmness. This is ramen as meditation—rich, comforting, and utterly unforgettable.

Absolutely incredible! The broth is so rich and creamy, you can taste the hours of simmering. The chashu melts in your mouth. Best ramen I've had outside of Japan.
This tonkotsu is the real deal. Perfectly milky broth, excellent noodle texture, and the egg was cooked to perfection. Will definitely be back!
Really good ramen with great depth of flavor. Only reason for 4 stars is I wish the portion was slightly bigger. Quality is outstanding though.
